Ingredients
- 3 1/2 c. all-purpose flour
- 3 c. peeled, finely chopped apples
- 2 c. sugar
- 1 tsp. salt
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1 1/2 c. vegetable oil
- 1/2 c. chopped nuts, toasted
- 1 tsp. vanilla
Method
- Preheat oven to 350°.
- Grease and flour muffin pans. Thoroughly combine flour, apples, sugar, salt, soda and cinnamon in large bowl.
- Stir in oil, nuts and vanilla.
- Divide batter among muffin pans (fill each 1/2 to 2/3).
- Bake about 30 minutes (until toothpick placed in center of muffin comes out clean). Makes 2 dozen.
