Ingredients

  • 3 1/2 c. all-purpose flour
  • 3 c. peeled, finely chopped apples
  • 2 c. sugar
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 1/2 c. vegetable oil
  • 1/2 c. chopped nuts, toasted
  • 1 tsp. vanilla

Method

  • Preheat oven to 350°.
  • Grease and flour muffin pans. Thoroughly combine flour, apples, sugar, salt, soda and cinnamon in large bowl.
  • Stir in oil, nuts and vanilla.
  • Divide batter among muffin pans (fill each 1/2 to 2/3).
  • Bake about 30 minutes (until toothpick placed in center of muffin comes out clean). Makes 2 dozen.
