- 1 1/4 cups flour, all-purpose
- 1 cup whole wheat flour
- 1 cup sugar
- 3/4 cup brown sugar packed
- 1 tablespoon cinnamon
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 3/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 3 large eggs
- 2 cups apples finely chopped
- 1 cup walnuts chopped
- 1/2 cup powdered sugar sifted
- 1/4 teaspoon vanilla extract
- 2 teaspoons milk
Method
- Generously grease and flour a 10-inch fluted tube pan;set aside.
- In a large mixing bowl combine the flours, sugars, cinnamon, baking powder, salt and baking soda.
- Add oil, vanilla and the eggs, beat until well mixed.
- Stir in the chopped apples and walnuts.
- Spoon batter evenly into prepared pan.
- Bake in a 350F (180C) oven for 45 to 50 minutes, or until cake tests done.
- Cool in pan 12 minutes; invert cake onto a wire rack.
- Cool thoroughly.
- Drizzle top with powdered sugar glaze, or dollops servings with sweetened whipped cream.
- Powdered Sugar Glaze: In small mixing bowl, stir together powdered sugar, vanilla and enough milk to make of drizzling consistency.
- Drizzle over cooled cake.
