Ingredients

  • 1 1/4 cups flour, all-purpose
  • 1 cup whole wheat flour
  • 1 cup sugar
  • 3/4 cup brown sugar packed
  • 1 tablespoon cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 2 cups apples finely chopped
  • 1 cup walnuts chopped
  • 1/2 cup powdered sugar sifted
  • 1/4 teaspoon vanilla extract
  • 2 teaspoons milk

Method

  • Generously grease and flour a 10-inch fluted tube pan;set aside.
  • In a large mixing bowl combine the flours, sugars, cinnamon, baking powder, salt and baking soda.
  • Add oil, vanilla and the eggs, beat until well mixed.
  • Stir in the chopped apples and walnuts.
  • Spoon batter evenly into prepared pan.
  • Bake in a 350F (180C) oven for 45 to 50 minutes, or until cake tests done.
  • Cool in pan 12 minutes; invert cake onto a wire rack.
  • Cool thoroughly.
  • Drizzle top with powdered sugar glaze, or dollops servings with sweetened whipped cream.
  • Powdered Sugar Glaze: In small mixing bowl, stir together powdered sugar, vanilla and enough milk to make of drizzling consistency.
  • Drizzle over cooled cake.
