Ingredients

  • 1 granny smith apple, cored and thinly sliced
  • 1 baby fennel, thinly sliced
  • Seeds from 1 pomegranate
  • 1 witlof, leaves removed
  • 200g mixed salad leaves
  • 100g valdeon cheese (Spanish blue) or other creamy blue cheese, crumbled
  • Dressing
  • 1 tbsp pomegranate molasses
  • 2 tsp honey
  • 4 tbsp orange juice
  • 1 tbsp sherry vinegar
  • Salt and pepper

Method

For dressing, combine all ingredients in a small bowl and whisk until smooth. For salad, combine all ingredients, except cheese, in a large bowl and toss gently. Add dressing and cheese and turn gently to coat.
