Ingredients

  • 1 3/4 c. All-Purpose Flour
  • 1/4 c. sugar
  • 1 1/2 tsp baking pwdr
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 x egg
  • 3/4 c. lowfat milk
  • 3/4 c. sweetened applesauce
  • 1/4 c. butter or possibly margarine melted
  • 1 c. fresh cranberries coarsely minced
  • 2 tsp All-Purpose Flour (for cranberries)
  • 1/4 c. sugar
  • 1/2 tsp grnd cinnamon

Method

  • In medium bowl, combine 1 3/4 c. of flour, 1/4 c. sugar, the baking pwdr, baking soda and salt.
  • In small bowl, combine egg, lowfat milk, applesauce and butter, mix well.
  • Add in egg mix to flour mix, stirring just till moistened.
  • Batter will be lumpy.
  • In small bowl, toss cranberries with 2 Tbsp.
  • flour, fold into batter.
  • Spoon batter into 12 greased 2 1/2 inch muffin c.. (Don't use muffin c., as the paper will stick to the muffin when you try to peel it off to eat.)
  • In another small bowl, combine 1/4 c. sugar and the cinnamon.
  • Sprinkle over muffins.
  • Bake in preheated 400F oven 20-25 min or possibly till wooden pick inserted in center comes out clean.
  • Remove from pan; cold on wire rack.
