Ingredients

  • 2 Apples, Cut Into 1/4 Inch Slices
  • 1 Tablespoon Cinnamon, Divided
  • 1/4 cups Sunflower Seed Butter (or Any Nut Butter)
  • 1/4 cups Honey
  • 2 Tablespoons Coconut Oil
  • 1-1/2 cup Old Fashioned Oats
  • 1/2 teaspoons Nutmeg

Method

  • Preheat oven to 250°F.
  • Place apple slices in a single layer on a large lined baking sheet. Sprinkle with 1/2 tablespoon of ground cinnamon. Bake apples for 20 minutes. Flip slices over and bake for another 20 minutes until soft and semi-dry. Let apples cool for about 10 minutes.
  • While apples are cooling, add nut butter, honey, and coconut oil to a small saucepan over low heat. Stir until coconut oil has melted and mixture is smooth. Take off heat and set aside.
  • Finely chop the apples into little pieces. In a large bowl, combine oats, apples, remaining 1/2 tablespoon of cinnamon, and nutmeg. Add nut butter mixture to oat mixture and stir to combine.
  • Press mixture into an 8 x 8 inch baking dish or a small cookie sheet lined with parchment paper. Place bars in the refrigerator or freezer for at least 10 minutes until firm.
  • Slice into 12 bars.
