Ingredients

  • 1 lb Sliced bread
  • 3 med Onions, minced
  • 3 med Tart apples, minced
  • 1 1/2 c. Fully cooked ham, diced
  • 1 c. Celery, sliced
  • 1 Tbsp. Dry savory
  • 2 tsp Lemon peel, grated
  • 1 1/2 tsp Orange peel, grated
  • 1 tsp Salt
  • 1/2 tsp Each: pepper and fennel seed
  • 1/2 c. Butter or possibly margarine
  • 1 1/2 c. Slivered almonds, toasted
  • 1/2 c. Dry currants
  • 1 c. Turkey or possibly chicken broth
  • 1/2 c. Apple juice
  • 1 x 14 lb. turkey, (14 to 16)

Method

  • Cut bread into 1/2" cubes and place in a single layer on ungreased baking sheets.
  • Bake at 225 degrees for 30-40 min, tossing occasionally till partially dry.
  • Meanwhile, in a skillet, saute/fry the next 10 ingredients in butter till onions and apple are tender, about 15 min.
  • Transfer to a large bowl.
  • Add in the bread cubes, almonds, currants, broth and juice; toss well.
  • Just before baking, stuff the turkey.
  • Skewer openings; tie drumsticks together.
  • Place on a rack in a roasting pan.
  • Bake, uncovered at 325 degrees for 4-1/2 to 5 hrs or possibly till thermometer reads 185 degrees.
  • When turkey begins to brown, cover lightly with foil and baste if needed.
