Ingredients

  • 2 onions, chopped
  • 1/2 c. oil
  • 4 tomatoes, peeled and chopped
  • 2 1/4 Tbsp. vinegar
  • 2 1/4 tsp. sugar
  • 2 tsp. curry
  • 2 lb. sauteed meat (any)
  • 6 potatoes, peeled and quartered
  • 2 c. frozen peas

Method

  • Fry onions in oil; add tomatoes and stir.
  • When it sticks, add vinegar, sugar and curry to create a sauce.
  • Blend sauce and set aside.
  • In a large covered skillet add meat, potatoes and frozen peas.
  • Add sauce, cover and simmer until potatoes are cooked. Serve with bowls of coconut, chutney, crushed pineapple and sliced bananas to garnish.
