Ingredients
- 2 onions, chopped
- 1/2 c. oil
- 4 tomatoes, peeled and chopped
- 2 1/4 Tbsp. vinegar
- 2 1/4 tsp. sugar
- 2 tsp. curry
- 2 lb. sauteed meat (any)
- 6 potatoes, peeled and quartered
- 2 c. frozen peas
Method
- Fry onions in oil; add tomatoes and stir.
- When it sticks, add vinegar, sugar and curry to create a sauce.
- Blend sauce and set aside.
- In a large covered skillet add meat, potatoes and frozen peas.
- Add sauce, cover and simmer until potatoes are cooked. Serve with bowls of coconut, chutney, crushed pineapple and sliced bananas to garnish.
