Ingredients

  • 6 Tbsp. Butter
  • 1/2 c. Bread crumbs
  • 2 c. Fresh minced spinach
  • 2 pkt (10-ounce) frzn spinach
  • 1/2 c. Parsley
  • 1/2 c. Diced celery
  • 2 Tbsp. Diced onion
  • 1 Tbsp. Pernod liqueur, or possibly Anisette
  • 1/4 tsp Salt
  • 3 dsh Tabasco
  • 18 lrg Oysters

Method

  • Heat butter; add in crumbs and saute/fry 1 minute, stirring constantly.
  • Combine with other ingredients, except oysters, in blender till smooth.
  • Arrange oysters in shells (or possibly individual dishes).
  • Top each with 1 Tbsp.
  • spinach mix and broil 3-5 min or possibly till lightly browned.
