Ingredients
- 12 potatoes, peeled and cut into 1/4-inch slices
- 4 hard-boiled eggs, chopped
- 1 small onion, chopped
- 2 c. mayonnaise
Method
- In large pot, boil 6 cups water.
- Add potatoes and cook 20 to 25 minutes.
- Drain water and cool for 15 minutes.
- In large bowl, add remaining ingredients with potatoes and toss gently.
- Add additional mayonnaise, if needed, and refrigerate.
- Salt and pepper to taste.
- Makes 6 to 8 servings.
