Ingredients
- 1 -1 12 lb ground round
- 1 large onion, chopped
- 12 teaspoon minced garlic
- 6 potatoes, peeled and diced -medium to large sized
- 2 (16 ounce) cans tomatoes, okra and corn mixture
- 4 peeled and sliced carrots (optional)
- salt
- pepper
Method
- Put potatoes into a large pot, cover with water and add 1 teaspoons salt.
- Bring to a boil.
- Reduce heat and simmer until tender, about 15 minutes.
- Meanwhile, brown ground round, onion and garlic.
- Drain grease from pan and add to the potato mixture.
- Add tomatoes, okra and corn mixture to the pot.
- Add carrots, if using.
- Cook over medium heat, about 30 minutes, stirring frequently.
- Taste and add more salt and pepper, if needed.
- Serve with cornbread.
