Ingredients

  • 1 -1 12 lb ground round
  • 1 large onion, chopped
  • 12 teaspoon minced garlic
  • 6 potatoes, peeled and diced -medium to large sized
  • 2 (16 ounce) cans tomatoes, okra and corn mixture
  • 4 peeled and sliced carrots (optional)
  • salt
  • pepper

Method

  • Put potatoes into a large pot, cover with water and add 1 teaspoons salt.
  • Bring to a boil.
  • Reduce heat and simmer until tender, about 15 minutes.
  • Meanwhile, brown ground round, onion and garlic.
  • Drain grease from pan and add to the potato mixture.
  • Add tomatoes, okra and corn mixture to the pot.
  • Add carrots, if using.
  • Cook over medium heat, about 30 minutes, stirring frequently.
  • Taste and add more salt and pepper, if needed.
  • Serve with cornbread.
