Ingredients
- 1 medium eggplant
- 1 1/2 tsp. chopped garlic
- 3 Tbsp. olive oil
- 2 Tbsp. parsley
- 2 (14 oz.) cans Contadina pasta ready tomatoes
- 1/8 tsp. hot peppers
- 1/2 tsp. basil
- 1 lb. spaghetti
Method
- Peel eggplant,
- slice
- into
- pieces and salt.
- Place in colander to
- drain for 30 minutes.
- Saute garlic in olive oil. Do not
- brown
- garlic.
- Add parsley, tomatoes, hot peppers and basil. Cook uncovered 25 minutes.
