Ingredients

  • 4 oz fresh or frozen medium shrimp
  • 1/2 c chicken broth
  • 2 Tbs soy sauce
  • 2 Tbs cornstarch
  • 1/2 tsp ground ginger
  • 8 oz boneless skinless chicken
  • 6 oz angel hair pasta
  • 2 tsp olive oil
  • 1/2 c green onion cut into half inch peices
  • 2 cloves garlic minced
  • 1 yellow summer squash sliced
  • 1 small red ,yellow or green pepper cut into strips

Method

  • thaw shrimp. in small bowl mix chicken broth, soy sauce, & cornstarch; set aside.
  • cut chicken into 3/4 in. pieces; set aside.
  • cook pasta according to directions except omit salt and oil. drain and keep warm
  • on medium heat in large skillet
  • mix and stir fry all vegetables until crisp-tender.
  • remove from skillet add chicken and shrimp to skillet cook til done.
  • then add broth mixture to chicken and shrimp stir til thick and bubbly. return vegetables to skillet stir til coated with sauce. serve over pasta
