Ingredients
- 1 peck Anaheim chili pepper
- 6 lb. diced onion
- 1 qt. sugar
- 2 gal. Hunt's ketchup
- 1 1/2 lb. diced garlic
- 2 c. apple cider vinegar
- 2 Tbsp. Zatarain's Creole seasoning
Method
- Remove all seeds from pepper and chop in small pieces.
- Mix all ingredients together in a heavy 4 gallon pot.
- Cook slowly, stirring frequently for 4 to 5 hours.
- Jar sauce up in hot, sterilized jars and lids.
- Great for baked fish, beef or pork.
