Ingredients

  • 10 ounce Canned diced tomatoes with green chiles
  • 1/2 c. Scallions, sliced
  • 1 x Clove garlic, chopped
  • 1 tsp Beef bouillon granules
  • 1 tsp Italian herb seasoning, crushed
  • 1 c. Tomato sauce
  • 3/4 lb Lamb shoulder, cut into 3/4 inch cubes
  • 1 med Zucchini, halved lengthwise and sliced
  • 1 lb Canned Great Northern beans, liquid removed

Method

  • Prep: 10 minutes, Cook: 15 minutes.
  • Combine all ingredients, except zucchini and beans, in a microwave casserole.
  • Cover and microwave on high 3 min.
  • Remove cover and stir.
  • Continue to microwave another 4 min.
  • Stir in zucchini and beans and microwave another 6-7 min, till meat is cooked throughout.
