Ingredients

  • 2/3 cup butter lettuce
  • 2/3 cup iceberg lettuce
  • 2/3 cup romaine lettuce
  • 1/4 cup cucumber (sliced very thin and fine)
  • 1/3 cup red cabbage
  • 1/3 cup cheddar cheese, shredded
  • 1/4 cup chickpeas
  • 1 tablespoon carrot, shredded
  • 2 tablespoons finely chopped radishes
  • 1/3 cup panko breadcrumbs
  • 1 tablespoon butter

Method

  • In a frying pan, melt the butter then put the panko in and mix until the crumbs are nice and coated. Put in a bowl and let cool for a few minutes.
  • In a large bowl, put all the ingredients together and toss.
  • Serve with a tangy French or 1000 island dressing, or your favorite type.
