- 2/3 cup butter lettuce
- 2/3 cup iceberg lettuce
- 2/3 cup romaine lettuce
- 1/4 cup cucumber (sliced very thin and fine)
- 1/3 cup red cabbage
- 1/3 cup cheddar cheese, shredded
- 1/4 cup chickpeas
- 1 tablespoon carrot, shredded
- 2 tablespoons finely chopped radishes
- 1/3 cup panko breadcrumbs
- 1 tablespoon butter
Method
- In a frying pan, melt the butter then put the panko in and mix until the crumbs are nice and coated. Put in a bowl and let cool for a few minutes.
- In a large bowl, put all the ingredients together and toss.
- Serve with a tangy French or 1000 island dressing, or your favorite type.
