Ingredients

  • 1 (11 oz.) can Mandarin oranges, drained (reserve juice)
  • 1 Tbsp. cornstarch
  • 1 (8 oz.) pkg. cream cheese
  • 1 baked pie shell
  • 1 (15 oz.) can sweetened condensed milk
  • 1/3 c. lemon juice
  • 1 tsp. vanilla
  • 1/2 c. toasted coconut

Method

  • Mix 1/2 cup reserved juice and cornstarch.
  • Cook until mixture thickens, stirring constantly.
  • Beat Cool Whip and softened cream cheese until light and fluffy.
  • Gradually beat in sweetened condensed milk until well blended.
  • Blend in lemon juice and vanilla.
