Ingredients

  • 1 cup flour, all-purpose
  • 1 cup whole wheat flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 4 each bananas very ripe
  • milk
  • 1 each liquid egg substitute
  • 2 tablespoons sugar or honey if bananas are not sweet enough

Method

  • Mix dry ingredients.
  • Mash bananas and add enough milk to make 1 1/2 cups total.
  • Add egg to bananas.
  • Pour wet over dry ingredients and stir just until mixed.
  • Spoon into 12 lightly greased/pammed muffin cups.
  • Bake at 400F (200C) for 20 minutes.
  • Remove from cups while still hot.
