Ingredients
- 1 cup flour, all-purpose
- 1 cup whole wheat flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 4 each bananas very ripe
- milk
- 1 each liquid egg substitute
- 2 tablespoons sugar or honey if bananas are not sweet enough
Method
- Mix dry ingredients.
- Mash bananas and add enough milk to make 1 1/2 cups total.
- Add egg to bananas.
- Pour wet over dry ingredients and stir just until mixed.
- Spoon into 12 lightly greased/pammed muffin cups.
- Bake at 400F (200C) for 20 minutes.
- Remove from cups while still hot.
