Ingredients

  • 1 lb. lean ground pork
  • 1 lb. lean ground veal
  • 1 lb. lean ground beef or chuck
  • 5 to 6 eggs
  • 1 Tbsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. oregano
  • 1 c. Parmesan cheese
  • 4 Tbsp. chopped parsley
  • 1/2 c. crushed saltine crackers

Method

  • Mix these ingredients together in a large bowl; form meatballs and add to sauce raw.
  • The meatballs will cook in the sauce.
  • If you make the sauce without the meatballs, you may need to add a little water or wine to make the sauce a little thinner.
  • The sauce starts out very thick, but the meatballs thin it out.
