- 1 lb. lean ground pork
- 1 lb. lean ground veal
- 1 lb. lean ground beef or chuck
- 5 to 6 eggs
- 1 Tbsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. oregano
- 1 c. Parmesan cheese
- 4 Tbsp. chopped parsley
- 1/2 c. crushed saltine crackers
Method
- Mix these ingredients together in a large bowl; form meatballs and add to sauce raw.
- The meatballs will cook in the sauce.
- If you make the sauce without the meatballs, you may need to add a little water or wine to make the sauce a little thinner.
- The sauce starts out very thick, but the meatballs thin it out.
