Ingredients

  • 6 x Large eggs Salt to taste
  • 1/4 c. Lowfat milk
  • 4 med Onions, minced
  • 2 Tbsp. Ghee (or possibly butter, if you do not have ghee)
  • 2 x Cloves garlic
  • 1/2 x Inch fresh ginger
  • 4 x Green chillies
  • 1 bn (small) coriander, minced
  • 1/2 tsp Cumin seeds
  • 2 sm Tomatoes, minced
  • 1/4 tsp Turmeric

Method

  • Break Large eggs in bowl, add in salt and lowfat milk, mix lightly.
  • Grind garlic and ginger together in a paste.
  • In a frying pan, fry onions in ghee till golden.
  • Add in ginger-garlic paste, fry for a couple of min, add in tomatoes, cumin seeds, chillies, coriander, turmeric.
  • Cook for about five min, till all ingredients are well mixed.
  • Remove from fire and allow to cold.
  • Add in the egg mix, stir over medium heat till akuri resembles scrambled Large eggs.
