Ingredients
- 1 acorn squash, halved and seeded
- 1/3 c. finely diced celery
- 1/2 c. diced, unpeeled apple
- 2 Tbsp. butter
- 1/2 c. soft bread crumbs
- 1/2 c. grated cheese (your choice)
- dash of salt and pepper
Method
- Bake squash in oven or microwave until nearly tender. Saute apple and celery in butter for 5 minutes. Stir in crumbs and salt and pepper. Fill squash with mixture and top with cheese. Bake 15 minutes longer until tender. Serves 2.
