Ingredients

  • 1 1/2 c. margarine (3 sticks)
  • 3 c. sugar
  • 5 eggs
  • 3 c. flour
  • 2 Tbsp. lemon extract
  • 3/4 c. 7-Up

Method

  • Cream sugar and shortening together and beat until light and fluffy.
  • Add eggs, one at a time and beat well.
  • Add flour alternately with lemon extract and 7-Up.
  • Pour batter into well-greased and floured tube or Bundt pan.
  • Bake at 325° for 1 to 1 1/4 hours.
  • When thoroughly cool, sift powdered sugar over cake. This cake freezes well and stays moist.
  • Serves 16.
