Ingredients
- 4 eggs
- 1 qt. buttermilk
- 5 c. flour
- 3 c. sugar
- 5 tsp. baking soda
- 1 (15 oz.) box Raisin Bran
- 1/2 c. chopped walnuts or pecans
- 1 c. chopped dates
- 2 tsp. salt
- 1 c. oil
Method
- In a large bowl, beat eggs and blend in buttermilk.
- Add flour, sugar, baking soda and salt.
- Mix in oil, bran flakes, nuts and dates.
- Allow batter to sit, covered, for 24 hours.
- Will keep up to 6 weeks.
- Prepare desired number of muffin tins with Baker's Joy or paper wrappers.
- Fill 2/3 full.
- Bake at 350° for 20 minutes.
