Ingredients

  • 4 eggs
  • 1 qt. buttermilk
  • 5 c. flour
  • 3 c. sugar
  • 5 tsp. baking soda
  • 1 (15 oz.) box Raisin Bran
  • 1/2 c. chopped walnuts or pecans
  • 1 c. chopped dates
  • 2 tsp. salt
  • 1 c. oil

Method

  • In a large bowl, beat eggs and blend in buttermilk.
  • Add flour, sugar, baking soda and salt.
  • Mix in oil, bran flakes, nuts and dates.
  • Allow batter to sit, covered, for 24 hours.
  • Will keep up to 6 weeks.
  • Prepare desired number of muffin tins with Baker's Joy or paper wrappers.
  • Fill 2/3 full.
  • Bake at 350° for 20 minutes.
