Ingredients

  • 1 cup ketchup
  • 1 cup salad cream
  • 2 tablespoons brandy
  • 1 pinch sugar
  • 5 5/8 cups leeks halved lengthways and cut into 1cm strips
  • 2 cans sweet corn 200g each, drained
  • 3 5/8 cups cooked ham sliced, cut into 2cm squares
  • 5 1/3 cups romaine lettuce chopped into bite-sized pieces
  • 2 cans mandarin segments 300g each, drained
  • 5 hardboiled eggs peeled and quartered
  • 2 sprigs fresh flat leaf parsley finely chopped

Method

  • For the dressing, combine ketchup, mayonnaise and brandy. Season and add a pinch of sugar. Set aside.
  • Blanch leeks in boiling salted water for 2 mins. Drain and rinse under cold water.
  • In a glass serving bowl, layer leeks, sweet corn, ham, lettuce and mandarin oranges in layers of about 3/4 inch high, drizzling dressing between each layer. Top with eggs and sprinkle with parsley.
