Ingredients
- 1 cup ketchup
- 1 cup salad cream
- 2 tablespoons brandy
- 1 pinch sugar
- 5 5/8 cups leeks halved lengthways and cut into 1cm strips
- 2 cans sweet corn 200g each, drained
- 3 5/8 cups cooked ham sliced, cut into 2cm squares
- 5 1/3 cups romaine lettuce chopped into bite-sized pieces
- 2 cans mandarin segments 300g each, drained
- 5 hardboiled eggs peeled and quartered
- 2 sprigs fresh flat leaf parsley finely chopped
Method
- For the dressing, combine ketchup, mayonnaise and brandy. Season and add a pinch of sugar. Set aside.
- Blanch leeks in boiling salted water for 2 mins. Drain and rinse under cold water.
- In a glass serving bowl, layer leeks, sweet corn, ham, lettuce and mandarin oranges in layers of about 3/4 inch high, drizzling dressing between each layer. Top with eggs and sprinkle with parsley.
