Ingredients
- 3 c. cooked long grain rice
- 1 (10 ounce.) pkg. frzn spinach, thawed & liquid removed
- 1/2 c. chopped parsley
- 1/2 c. slivered almonds
- 1/4 c. butter
- 2 teaspoon fresh lemon juice
- 1 teaspoon salt
- Dash garlic pwdr
- 1 egg
- 1 c. lowfat milk
Method
- Combine rice, spinach, onion, parsley, almonds, butter, lemon juice, salt and garlic pwdr.
- In a 2 qt casserole.
- Beat egg with lowfat milk.
- Stir into rice mix.
- Cover and chill.
- When thoroughly cooled, bake in microwave for 15 min, turning dish every 4 min.
- Let casserole set for 10 min before serving.
- NOTE: If the rice is cooked in the 2 qt casserole first, and then the casserole, you will save on cleaning time.
