Ingredients

  • 3 c. cooked long grain rice
  • 1 (10 ounce.) pkg. frzn spinach, thawed & liquid removed
  • 1/2 c. chopped parsley
  • 1/2 c. slivered almonds
  • 1/4 c. butter
  • 2 teaspoon fresh lemon juice
  • 1 teaspoon salt
  • Dash garlic pwdr
  • 1 egg
  • 1 c. lowfat milk

Method

  • Combine rice, spinach, onion, parsley, almonds, butter, lemon juice, salt and garlic pwdr.
  • In a 2 qt casserole.
  • Beat egg with lowfat milk.
  • Stir into rice mix.
  • Cover and chill.
  • When thoroughly cooled, bake in microwave for 15 min, turning dish every 4 min.
  • Let casserole set for 10 min before serving.
  • NOTE: If the rice is cooked in the 2 qt casserole first, and then the casserole, you will save on cleaning time.
