Ingredients
- 1/3 c. Bisquick
- 1/4 c. grated Parmesan cheese
- 2 eggs, slightly beaten
- 2 c. grated zucchini squash
- 2 Tbsp. butter or oleo, melted
Method
- Mix Bisquick and cheese.
- Stir in eggs and butter or oleo. Fold in zucchini.
- Fry in butter or oleo.
- Cook 2 to 3 minutes on each side.
