Ingredients
- 2/3 c. cider vinegar
- 2 Tbsp. wine vinegar
- 1/3 c. oil
- 1/2 c. sugar
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/2 c. chopped green pepper
- 1/3 c. sliced celery
- 1/2 c. diced onion
- 5 to 7 zucchini, sliced thin
- 1 (2 oz.) jar diced pimientos
Method
- Mix vinegars and spices.
- Add to vegetables; mix carefully. Marinate in refrigerator at least 6 hours.
- Serves 10 to 12.
