Ingredients
- 11 c. diced zucchini squash
- 3 c. diced onion
- 3 Tbsp. salt
- 3 c. chopped peppers (some red for color)
- 1 Tbsp. white mustard seed
- 1 Tbsp. celery seed
- 1 tsp. turmeric
- 3 c. sugar
- 2 c. vinegar
Method
- Mix the squash, onions and salt; let stand overnight.
- Drain well.
- Add the peppers, mustard seed, celery seed, turmeric, sugar and vinegar.
- Boil until clear, about 1/2 hour.
- Seal in hot sterile jars.
