Ingredients

  • Chicken
  • 4 chicken breasts
  • 1 tablespoon olive oil
  • 1/3 cup flour
  • 1 teaspoon salt
  • 1 teaspoon Mrs. Dash onion & herb seasoning
  • 1/4 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Mrs. Dash Italian Medley
  • 16 ounces ziti pasta, cooked and strained
  • Burrata cheese
  • Fresh Tomato Sauce
  • 12 Roma tomatoes, chopped
  • 3 garlic cloves, minced
  • 3-4 tablespoons olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 basil leaves, finely chopped

Method

  • Heat a deep skillet over medium heat, and add the olive oil
  • Dip the chicken in flour coating both sides, place in skillet.
  • Sprinkle the seasonings over the chicken.
  • Cook 4-5 minutes on each side until fully cooked with no pink in the center.
  • Cut the chicken into strips, and set aside.
  • Wipe out the skillet with paper towels, and add a Tbsp of olive oil and the garlic.
  • Cook 1 minute, then add the tomatoes, salt and pepper.
  • Mix well, and retain a light boil stirring often for 10-15 minutes until the tomatoes break down.
  • Keep drizzling 1-2 tsp of olive oil every few mintes. Add fresh basil and mix well.
  • To serve the meal, scoop the ziti on a plate, top with fresh tomato sauce, strips of chicken, drizzle 1-2 Tbsp of Burrata cheese, then top with fresh basil.
