Ingredients

  • 5 c. grated zucchini
  • 2 c. grated onions
  • 2 Tbsp. salt
  • 1 1/2 c. vinegar
  • 2 1/2 c. sugar
  • 2 tsp. turmeric
  • 2 tsp. dry mustard
  • 2 tsp. nutmeg
  • 1 Tbsp. cornstarch
  • 1/4 tsp. black pepper
  • 1 tsp. celery seed
  • 2 c. chopped green or red sweet pepper

Method

  • Mix first 3 ingredients and cover.
  • Let stand overnight. Rinse and drain.
  • In a large pot, place zucchini-onion mixture and add remaining ingredients.
  • Bring to a boil, then simmer for 30 minutes.
  • Stir occasionally.
  • Pack hot relish into sterile pint jars and process in hot water bath for 20 minutes or use the directions with your processor.
