- 5 c. grated zucchini
- 2 c. grated onions
- 2 Tbsp. salt
- 1 1/2 c. vinegar
- 2 1/2 c. sugar
- 2 tsp. turmeric
- 2 tsp. dry mustard
- 2 tsp. nutmeg
- 1 Tbsp. cornstarch
- 1/4 tsp. black pepper
- 1 tsp. celery seed
- 2 c. chopped green or red sweet pepper
Method
- Mix first 3 ingredients and cover.
- Let stand overnight. Rinse and drain.
- In a large pot, place zucchini-onion mixture and add remaining ingredients.
- Bring to a boil, then simmer for 30 minutes.
- Stir occasionally.
- Pack hot relish into sterile pint jars and process in hot water bath for 20 minutes or use the directions with your processor.
