Ingredients

  • 1 pound navy beans
  • 4 medium potatoes, diced
  • 1 pound bacon, cut in small pieces
  • 1 medium sweet onion, diced
  • 1 14.5 oz can of diced tomatoes
  • 1 teaspoon parsley
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Method

  • Cook beans until soft in large amount of water. Add potatoes; continue cooking until potatoes are tender. Fry bacon; saute onion in bacon grease. Add to beans and potatoes. Add tomatoes; season with parsley, salt and pepper. Simmer 10 minutes. Serve with warm cornbread or hard rolls.
