Ingredients

  • 1/2 c. bread crumbs
  • 1 1/2 lb. ground beef
  • 2/3 c. tomato paste
  • 2 eggs, beaten
  • 1/2 c. chopped onions
  • 1/4 c. chopped green peppers
  • 1/4 c. chopped Parmesan cheese
  • 2 Tbsp. oil
  • pinch of garlic powder
  • 2 to 3 medium zucchini
  • 1 c. tomato soup
  • 1/2 c. shredded Mozzarella

Method

  • In large bowl mix first 8 ingredients.
  • Set aside.
  • Add garlic and zucchini slices to hot oil and saute 10 minutes on medium heat.
  • Put 1/2 mixture meat into 8-inch greased square pan.
  • Top with layer of sauteed zucchini, cover with remaining meat mixture. Top with tomato sauce and cheese.
  • Bake at 350° for 1 hour. Let cool 10 minutes before serving.
