Ingredients

  • 1 lb. dry small white beans
  • 1 1/2 lb. lean pork, cut into 1-inch cubes
  • 1/2 tsp. salt
  • 3 Tbsp. prepared mustard
  • 1 c. catsup
  • 1 c. packed brown sugar
  • 1/3 large sweet onion, sliced thin or chopped

Method

  • Cook white beans in water to cover in saucepan until almost done, soft but not mushy.
  • Drain off almost all water.
  • Combine beans with all other ingredients and place in a bean pot, 9 x 13-inch greased casserole dish or a slow cooker.
  • Bake in oven at 300° for 2 to 3 hours, uncovered.
  • In slow cooker, heat on low overnight.
  • Use bean pot directions for baked beans.
  • Yield:
  • 10 to 12 servings.
