Ingredients
- 1 lb. dry small white beans
- 1 1/2 lb. lean pork, cut into 1-inch cubes
- 1/2 tsp. salt
- 3 Tbsp. prepared mustard
- 1 c. catsup
- 1 c. packed brown sugar
- 1/3 large sweet onion, sliced thin or chopped
Method
- Cook white beans in water to cover in saucepan until almost done, soft but not mushy.
- Drain off almost all water.
- Combine beans with all other ingredients and place in a bean pot, 9 x 13-inch greased casserole dish or a slow cooker.
- Bake in oven at 300° for 2 to 3 hours, uncovered.
- In slow cooker, heat on low overnight.
- Use bean pot directions for baked beans.
- Yield:
- 10 to 12 servings.
