Ingredients

  • 1 (16 ounce) package wagon wheel macaroni
  • 12 lb bacon, diced
  • 1 onion, chopped
  • 4 -6 cloves garlic, minced
  • 3 medium zucchini, halved and sliced
  • salt
  • 3 tablespoons lemon juice
  • 12 cup grated parmesan cheese

Method

  • Prepare pasta according to package directions.
  • In a large skillet cook bacon over medium heat until crisp.
  • Remove bacon to drain on paper towel lined plate; discard all but 2 tablespoons of drippings.
  • Saute onion and garlic in bacon drippings for about 3 minutes or until tender.
  • Add zucchini and salt; saute about 6 minutes or until tender.
  • Drain pasta and add to zucchini mixture.
  • Add lemon juice and bacon; toss well.
  • Pour into a serving bowl and sprinkle with parmesan cheese.
