Ingredients
- 5 Tbsp. Bisquick
- 1/4 tsp. salt
- 2 eggs
- 2 c. zucchini
- 1/2 c. Parmesan cheese
- 1/8 tsp. pepper
- 2 Tbsp. butter
Method
- In a bowl, blend together the Bisquick, Parmesan cheese, salt and pepper. Add 2 eggs.
- Grate the zucchini and add to the mixture, making a batter.
- In a large frypan or pancake griddle, melt 2 tablespoons butter.
- Pour batter into pancake size.
- Fry 3 minutes on each side. Serve while warm.
- Makes 8 to 10 fritters.
