Ingredients
- 4 or 5 medium zucchini, sliced 1/4 inch thick
- 3 medium carrots, shredded
- 1 medium onion, chopped
- 1 can cream of mushroom soup
- 1 c. sour cream
- 1 c. seasoned croutons
Method
- Boil zucchini until tender.
- Meanwhile saute carrots and onions in a little butter until limp.
- Add soup and sour cream. Add 3/4 cup croutons and zucchini, stirring gently.
- Pour into 2-quart greased casserole.
- Sprinkle remaining croutons on top. Bake at 350° for 20 to 25 minutes.
