Ingredients
- 6 c. cubed, fresh zucchini
- 1 c. grated carrots
- 1 small onion, diced
- 1 can cream of chicken soup
- 1 (8 oz.) pkg. cream cheese
- 4 Tbsp. margarine, melted
- 1/2 ??? cracker crumbs
- 2 Tbsp. margarine, melted
Method
- Cook zucchini, carrots and onion until tender; do not add water.
- Drain.
- Combine soup, cheese and 4 tablespoons of margarine.
- Add vegetables.
- Stir together gently.
- Pour into baking dish.
- Cover with cracker crumbs and 2 tablespoons of margarine.
- Bake at 350° for 30 minutes.
