Ingredients

  • 6 c. cubed, fresh zucchini
  • 1 c. grated carrots
  • 1 small onion, diced
  • 1 can cream of chicken soup
  • 1 (8 oz.) pkg. cream cheese
  • 4 Tbsp. margarine, melted
  • 1/2 ??? cracker crumbs
  • 2 Tbsp. margarine, melted

Method

  • Cook zucchini, carrots and onion until tender; do not add water.
  • Drain.
  • Combine soup, cheese and 4 tablespoons of margarine.
  • Add vegetables.
  • Stir together gently.
  • Pour into baking dish.
  • Cover with cracker crumbs and 2 tablespoons of margarine.
  • Bake at 350° for 30 minutes.
