Ingredients
- 2 c. sifted flour
- 1 1/2 tsp. baking powder
- 1 tsp. salt
- 1/2 tsp. baking soda
- 1 egg or 2 egg whites
- 1/4 c. oil
- 3/4 c. orange juice
- rind of 1/2 orange
- 1 c. sugar
- 1 c. cranberries
- 1 c. chopped pecans
Method
- Preheat oven
- to 350°.
- Oil
- 9 x 5 x 3-inch loaf pan. Sift flour,
- baking
- powder, salt and baking soda into a mixing bowl and set aside.
- Put egg, oil, orange juice, rind and sugar into blender container.
- Cover
- and
- process at mix speed until rind is finely grated.
- Stop blender and add into flour mixture and
- mix by hand only
- until
- flour
- is
- moistened.
- Pour
- into prepared pan and bake 50 to 60 minutes or until cake is done.
