Ingredients

  • 2 c. sifted flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 1 egg or 2 egg whites
  • 1/4 c. oil
  • 3/4 c. orange juice
  • rind of 1/2 orange
  • 1 c. sugar
  • 1 c. cranberries
  • 1 c. chopped pecans

Method

  • Preheat oven
  • to 350°.
  • Oil
  • 9 x 5 x 3-inch loaf pan. Sift flour,
  • baking
  • powder, salt and baking soda into a mixing bowl and set aside.
  • Put egg, oil, orange juice, rind and sugar into blender container.
  • Cover
  • and
  • process at mix speed until rind is finely grated.
  • Stop blender and add into flour mixture and
  • mix by hand only
  • until
  • flour
  • is
  • moistened.
  • Pour
  • into prepared pan and bake 50 to 60 minutes or until cake is done.
