Ingredients
- 6 c. zucchini, sliced
- 1/2 c. chopped onion
- 1 can cream of chicken soup
- 1 c. sour cream
- 1 c. shredded carrots
- 1 pkg. herb seasoned stuffing mix
- 1/2 c. melted butter or margarine
Method
- Cook zucchini about 5 minutes.
- Combine soup, sour cream, onions and carrots.
- Fold in with drained zucchini.
- Put in 1 large or 2 small casseroles.
- Mix stuffing mix with margarine and spread over top.
- Bake in 350° oven for 30 minutes.
