Ingredients
- 2 1/2 c. shredded zucchini
- 1 c. diced celery
- 1 c. diced onion
- 1 1/2 c. water
- 1/2 stick oleo
- 1 c. shredded cheese
- 2 c. cracker crumbs
- 2 beaten eggs
- salt and pepper to taste
Method
- Cook zucchini, celery and onion in 1 1/2 cups water until tender.
- Do not drain.
- Add oleo.
- Cool.
- Add cheese, cracker crumbs, eggs, salt and pepper.
- Bake, uncovered, in greased casserole for 1 hour at 350°.
