Ingredients

  • 2 c. sugar
  • 3 c. flour
  • 1 tsp. baking soda
  • 1/4 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1 c. oil
  • 1 tsp. vanilla
  • 3 eggs, beaten
  • 2 c. shredded raw zucchini
  • 3/4 c. chopped walnuts
  • 1/4 tsp. allspice

Method

  • Grease 2 large loaf pans or 4 smaller pans and flour.
  • Place dry ingredients in a bowl; blend and make a well.
  • Mix all liquid ingredients together.
  • Add to the well of dry ingredients, then add zucchini and nuts.
  • Pour into pans and bake for 55 minutes at 350°, 35 minutes for small pans, 15 minutes for mini muffin pans. Cool before removing from pan.
