Ingredients

  • 1/2 lb. butter/margarine
  • 2 c. unpeeled zucchini
  • 3 c. flour
  • 3 eggs
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. baking powder
  • 3/4 tsp. baking soda
  • 1 c. nuts (optional)
  • 1 c. raisins (optional)

Method

  • Melt butter or margarine and let cool.
  • Cream eggs in butter and sugar.
  • Beat together.
  • Add the grated zucchini.
  • Add all dry ingredients.
  • Add raisins and chopped nuts (optional).
  • Sprinkle top with sugar before baking.
  • Bake at 350° for 1 1/2 hours (less time for smaller pans).
  • Vanilla or lemon extract can be used instead of nuts and raisins.
