Ingredients
- 1 c. butter or oleo
- 2 1/2 c. sugar
- 3 eggs
- 2 Tbsp. vanilla
- 2 c. grated zucchini
- 3/4 c. pecans
- 1/2 c. coconut
- 3 c. flour
- 1/2 tsp. baking powder
- 1 tsp. soda
- 1/4 tsp. salt
- 1/2 tsp. nutmeg
- 1 tsp. cinnamon
Method
- Cream the butter, sugar, eggs and vanilla.
- Add all dry ingredients slowly.
- Add zucchini, coconut and pecans.
- Bake at 325° to 350° for about 1 hour in a greased Bundt pan or until done.
- Test with a toothpick.
- If it comes out clean, bread is done.
