Ingredients

  • 1 can (16 ounces) beets, drained
  • 3 canned anchovy fillets
  • 2 tablespoons plain, fat-free yogurt
  • 1 tablespoon lemon juice
  • 1 garlic clove
  • 1/4 teaspoon freshly ground pepper
  • 2 ounces feta cheese, crumbled
  • 1/4 cup chopped green onion

  • Preparation:
  • Puree beets, anchovy fillets, yogurt, lemon juice, garlic and pepper in a food processor. Stir in feta cheese and green onion. Refrigerate until chilled.
