- 1 1/2 c. grated zucchini
- 2 c. flour
- 1/4 tsp. salt
- 1/4 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. mace
- 1 tsp. cinnamon
- 1 c. sugar
- 2 eggs
- 1/2 c. oil
- 1 Tbsp. lemon juice
- 1 tsp. vanilla extract
- 1/2 c. chopped walnuts
Method
- Preheat oven to 325°.
- Grease loaf pans.
- Grate the zucchini; set aside.
- Stir together the dry ingredients.
- Make a well inside and pour in the liquid.
- Stir to blend well, then stir in the zucchini and nuts.
- Pile into greased loaf pan or mini loaf pans. Bake 1 1/4 hours for loaf, 40 to 50 minutes for smaller loaves depending on size.
- Makes 1 large or 2 small loaves.
