Ingredients

  • 1 1/2 c. grated zucchini
  • 2 c. flour
  • 1/4 tsp. salt
  • 1/4 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. mace
  • 1 tsp. cinnamon
  • 1 c. sugar
  • 2 eggs
  • 1/2 c. oil
  • 1 Tbsp. lemon juice
  • 1 tsp. vanilla extract
  • 1/2 c. chopped walnuts

Method

  • Preheat oven to 325°.
  • Grease loaf pans.
  • Grate the zucchini; set aside.
  • Stir together the dry ingredients.
  • Make a well inside and pour in the liquid.
  • Stir to blend well, then stir in the zucchini and nuts.
  • Pile into greased loaf pan or mini loaf pans. Bake 1 1/4 hours for loaf, 40 to 50 minutes for smaller loaves depending on size.
  • Makes 1 large or 2 small loaves.
