Ingredients

  • 3 eggs
  • 1 c. Crisco oil
  • 2 c. grated zucchini (unpeeled), coarsely grated
  • 2 tsp. vanilla flavoring
  • 2 1/2 c. sugar
  • 1/2 c. chopped pecans
  • 3 c. flour
  • 1 tsp. salt
  • 1 tsp. soda
  • 1/2 tsp. baking powder
  • 3 tsp. cinnamon

Method

  • Beat eggs; add oil, sugar, zucchini, nuts and vanilla.
  • Mix lightly, but well.
  • Add flour, salt, baking powder, soda and cinnamon which have been sifted together.
  • Mix until well blended. Bake at 350° for 1 hour.
  • Makes 2 loaves.
