Ingredients

  • 36 cherry tomatoes
  • 1/2 c. sour cream
  • 3 Tbsp. jalapeno peppers, chopped
  • 3 Tbsp. sliced green onions with tops
  • 2 tsp. flour
  • 3/4 tsp. sugar
  • 1/2 tsp. salt
  • 1/4 c. Cheddar cheese, shredded

Method

  • Scoop out tomatoes and turn upside down on paper towels.
  • A 1/4 teaspoon measuring spoon is perfect.
  • In small bowl, combine sour cream, peppers, onions, flour, sugar and salt.
  • Mix well. Using a pastry bag or small spoon, fill each tomato (can be done up to 8 hours ahead) and place on foil-lined pan.
  • Broil 2 to 3 minutes or until sour cream is bubbly.
  • Sprinkle with cheese and broil 2 to 3 minutes longer until cheese is melted.
