Ingredients

  • 6 to 7 cups of lettuce (can be iceberg, green leaf, or romaine) thinley shedded.
  • 1 large tomatoe chopped in 1/4 inch pieces
  • 1 bunch of cilantro, finely chopped.
  • 8 small green onions finely chopped.
  • 2 small carrots grated
  • 3 jalapenos roasted and finely chopped.
  • 1 small lime.
  • salt and pepper to taste.

Method

  • Dice tomatoes, finely chop cilantro, and green onions put in bowl, mix and lightly season with salt and pepper. Finely shred lettuce and grate carrots and add to bowl and toss. Roast jalapones peel and seed and finely chop, and add to bowl. Juice half of lime to salad, and toss and taste. Might want to add more lime juice and salt and pepper if needed.
