Ingredients

  • 1 lb ground turkey
  • 12 onion, chopped (optional or you can use onion powder for those that don't like the onion pieces, like DH!)
  • 2 -3 cups cooked egg noodles (or any noodle you prefer)
  • 1 (10 3/4 ounce) can cheese soup (the fiesta blend would also be great!)
  • 1 (10 3/4 ounce) can chicken broth or 1 (10 3/4 ounce) can water
  • 1 12 tablespoons taco seasoning (to taste)
  • salt and pepper, to taste
  • sour cream (optional)
  • salsa (optional)

Method

  • In a pot cook the noodles according to package, or you can throw them with the meat and sauce if you'd like.
  • In a large skillet, brown meat and onion til done; strain and return to skillet.
  • Add broth, chicken broth, taco seasoning and noodles.
  • Cook on medium low heat for 10 minutes for flavors to incorporate.
  • If sauce seems to thick, add a little more broth or water.
  • Season with salt and pepper.
  • Serve with a dallop of sour cream.
  • Enjoy!
  • *OPTIONS* For a twist, throw in some frozen corn and black beans.
