Ingredients
- 1 (5 oz.) pkg. yellow rice
- 1 (12 oz.) can Mexicorn, drained
- 1 medium onion, chopped
- 1 (8 oz.) can tiny English peas, drained
- 1 (2 oz.) jar pimentos (optional)
- 1 (10 1/2 oz.) can undiluted cream of chicken soup
- 1 (8 oz.) carton sour cream
- 1/2 stick margarine, melted
- 1 c. grated Cheddar cheese
Method
- Cook yellow rice according to directions on package.
- Blend soup, sour cream and melted margarine.
- Combine all ingredients except grated cheese.
- Pour into 7 x 11-inch baking dish (10-inch Corning dish is perfect).
- Cook for 25 minutes at 350°.
- Top with cheese and return to oven for 5 more minutes.
- This is different and delicious!!!!
