Ingredients
- 10 oz. baking potatoes, sliced 1/4 inch thick
- 1/4 c. salsa
- 1 1/2 oz. shredded Cheddar cheese
- 1/4 c. chopped green pepper
- 2 tsp. drained canned green chili peppers, chopped
Method
- Arrange potatoes in a 9-inch plate, overlapping slices. Loosely cover and microwave on High 4 to 5 minutes until tender. Spread salsa over potatoes.
- Place green pepper and chili peppers on top of salsa.
- Top with cheese and microwave on High 1 to 2 minutes until cheese is melted.
- Let stand 5 minutes and serve.
